Sub catches
I noted that Shane Watson has played 8 Tests but is yet to claim his first Test catch. He was on subbing for Pup (who'd gone off for an xray on his thumb).
It got me thinking. If Watson takes a catch, does that count as breaking his Test catching duck? If it was an uncapped 12th man taking a catch, then he can't have a Test record. Does the same apply for already capped players?

Younis Khan holds the record for most catches by a sub in a Test innings with the 4 he took in the Banger 2nd innings for Pak at Multan in 2001-02.

Well before that ... I am thinking of 5 catches in a match, perhaps?
He was a sub, he fielded at short leg, the match was in India ... beyond that I am struggling, cannot recall his name.

Anyway, Gursharan Singh is listed on Cricinfo as taking 2 test catches, so I guess that answeres your OP question.

The only other subi I can find that took several catches as a sub in a Test is Haroon Rashid in England's 1st innings at Leeds in 1982.
